On Wrangler JK models, this is often caused by corroded sensor connectors exposed to water crossings. Test the sensor with a multimeter (resistance should change smoothly with temperature) or replace it for R400-R750.
How do I test a Jeep coolant temperature sensor?
Use a multimeter to check resistance: at 20°C it should read around 2,500 ohms, dropping to 300 ohms at 80°C for most Jeep sensors. Compare actual coolant temperature (infrared thermometer) with sensor readings using a scan tool. If readings don't match or sensor resistance is erratic, replace it—testing takes 15 minutes and can save you from misdiagnosing thermostats or radiators.
